Endometriosis Friendly Mushroom Chicken

Endo-Friendly Mushroom Chicken

Ingredients:
4 boneless chicken breasts (pounded to ¼” (½ cm) thickness)
2 tablespoons of olive oil
2 cloves of minced garlic
¼ cup chopped fresh parsley
1 cup sliced button mushrooms
½ cup chicken broth

Instructions: Heat the olive oil in a skillet over medium heat. Add parsley and garlic and sauté for 3 to 4 minutes. Add chicken and brown the chicken breasts on both sides. Then add the mushrooms and chicken broth. Cook 10 minutes until chicken is no longer pink in the middle. Ladle broth over chicken breasts. 

Serve with a non-glycemic vegetable side dish, such as steamed broccoli, sautéed baby bok choy, or stir-fried zucchini (courgette) with onions.
